There are cookbooks and there are
biographies, but rarely are the two
combined as they are in Personal
Favorites: The Chefs of Las Vegas.
The very concept of Las Vegas dining
has experienced unprecedented change
during the past decade. While a few
chefs were keeping the faith in scattered
locations in some of the cityıs resorts
and a few neighborhood locations, the
gambling mecca for many years was
known primarily for food for the masses,
cheap and in huge quantities. Powdered
scrambled eggs, overflowing buffets of
steam-table staples, oh-so-skinny prime
rib with watery mashed potatoes and
rubber shrimp were the stock in trade.
That began to change in the ı90s, as a
steady stream of celebrity chefs and
lesser-known but equally talented lights
began a parade to the city. It continues
today, when visitors to Las Vegas can win
at both the dining and gaming tables.
